Sunny San Diego

This weekend was a gorgeous weekend in San Diego. A beautiful weekend to be outside - my face was very "sunshine-y" this morning!

Here are a few of the lovely veggies that decided to come home with me from the farmer's market in Hillcrest. I picked up some pretty unique fruit, as well.

Tiny carrots, little purple peppers, and white, red, and purple radishes. They made a good lettuce-less salad for dinner last night.

I have made this recipe several times and am in love! I have made it with both red and golden beets and prefer the golden beet greens.


I present, in their raw form, my beets, greens, onion, and garlic.

Beets are very easy to peel if you wait until they are roasted.

Beets and Sweets

I basically did as written, but I really cut the recipe down and used real garlic.


A -As requested, a picture of golden beets. I did not peel them because they were so tiny and the skin was so thin.





This is a photo of the completed dish. It really turned out well.









I also made Roasted Garlic Cauliflower. I loved it and will, without question, make again.
